Homemade Cheesecake with macerated strawberries


My dad loves cheesecake, so every Fathers Day and birthday this simple homemade cheesecake makes an appearance. You could add in your favourite flavouring – think berry, chocolate or caramel swirl, or keep it simple with some fresh seasonal fruit.

This recipe makes one big cake, but you could easily turn it into individual cakes using a muffin tin and baking paper strips.

Homemade cheesecake with macerated strawberries

  • 150g (3/4 packet) arrowroot biscuits
  • 90g flaked almonds
  • 135g white chocolate, melted
  • 90g butter, melted
  • 250g cream cheese
  • 90g castor sugar
  • 1 tspn orange zest
  • 2 tbsp orange/tropical juice
  • 125ml cream
  • 1 egg white
  • Punnet of strawberries
  • 1 tbsp caster sugar
  • 1 tspn orange zest
  • 2 tbsp orange/tropical juice

Method

  1. Put biscuits and almonds in a food processor and blend until fine crumbs
  2. Stir in melted chocolate & butter until combined
  3. Press into a flan tin with removable base and refrigerate
  4. To make the filling, beat cream cheese, sugar & orange zest with electric beaters until soft and creamy
  5. Beat in orange juice until just combined
  6. Whip the cream in a clean bowl until soft peaks form
  7. In a separate bowl, whip the egg white until soft peaks form
  8. Fold the cream & egg into the cream cheese mixture, spoon into prepared base and refrigerate
  9. Cut strawberries into quarters and combine with sugar, zest and juice in a container
  10. Allow to sit for several hours and drain before serving on top of cheesecake
